Edison is a hard white spring wheat developed by retired English teacher and backyard breeder Merrill Lewis of Bellingham, Washington. Merrill gave his seed to Dr. Steve Jones at WSU Bread Lab for his team to include in their wheat trials. The trials were a success, showing a promising white wheat with excellent baking strength, light color and mellow flavor profile. It is a newcomer on the wheat scene, but growing in popularity.
